I have selected 'SSL' in the settings but is there some sort of indication that a SSL connection was successfully established? I do not see anything remarkable in the 'Log' panel.

The "Log View" displays the commands being negotiated between the server and the client.

Example:

[13:47:53] COMMAND ->  AUTH TLS

[13:47:53] REMOTE  ->  AUTH command OK. Initializing SSL connection.

[13:47:53] SECURE  ->  Connected. Exchanging encryption keys...

[13:47:53] SECURE  ->  SSL encrypted session established.

[13:47:55] SECURE  ->  Connected. Exchanging encryption keys...

[13:47:55] SECURE  ->  SSL encrypted session established.

The easiest way to determine if you have established a SSL connection, will be by looking for a lock icon on the status bar.
The color of the lock icon will be in yellow or gold. Double-clicking the lock icon, will allow you to view the servers SSL certificate.
You will also have the option of installing the server side SSL certificate as well.
